Family Asteraceae, related to thistle and cardoon. The artichoke is the edible bud of the flower inflorescence, harvested before blooming. If the bud is left on the plant, the flower will bloom bright purple, drawing pollinators. This plant thrives in the cool season in Texas, and may form offshoots or "pups" after it blooms in the Spring.
