ASIAN GREENS 'Dwarf White Stem'

Often referred to as a nai pe tsai type, pretty pak choi has itty bitty white spoon-shaped petioles and dark green, glossy leaves. This variety grows best in mild climates and can tolerate heat. Mulch well when temps are consistently below 50°F to avoid premature bolting. To harvest, cut the short root stem below the base and lift away the head - harvest around 4" tall, ideally in the morning before the sun has pulled moisture from the leaves. Use in stir-fries, sauté, or braise. To prepare, rinse well and separate the stems before tearing leaf greens from ribs. Cut into thin slices. For stir fry, cut into 1/2" slices and saute with oil, vegetables, and/or the meat of your choice. Also delicious added into soups. 40-45 days, Heirloom.
