Drought tolerant vine from South Asia and China. Pale purple flowers and curved, cream-colored pods with a pale purple edge. The vigorous plant growth produces long vines, great for covering a fence, arbor, or trellis, or as a ground cover. Beans must be fully cooked before eating as they have a compound that can make you ill unless it is denatured by heat - boiling or steaming is great, and harvest the pods while young and tender for the tastiest result.
To create a delicious Italian-inspired bean salad: Boil or steam the beans until just tender. Drain off the liquid. Toss the beans in a vinaigrette with diced onion, torn crisp lettuce, chopped hard-boiled eggs, grated parmesan cheese, olives, and fresh herbs. It will have everyone asking for more! 90-100 days, heirloom.
