Heirloom edible and ornamental hyacinth beans have been grown in China for centuries and are beloved for their delicious pods and drought tolerance. The vigorous plant growth produces long vines, great for covering a fence, arbor, or trellis, and as a ground cover. The bean pods are flat, thick, and curved like a crescent moon. Dark green leaves and stems with deep purple tinge, reddish-purple pods and light purple flowers. Beans must be fully cooked before eating as they have a compound that can make you ill unless it is destroyed by heat - boiling or steaming is great, and harvest the pods while young and tender for the tastiest result.
