Can be used in place of other oregano varieties, or in place of sage, has a similar flavor and aroma to both. Use less, as it is very flavorful! Sharp and almost peppery when raw, sweetening when cooked. In India, the succulent leaves are often breaded and deep fried, we think that sounds delicious! AKA Mother of herbs', 'Spanish thyme', or 'Indian borage'. From the coastal regions of the Indian Ocean where it has been used in cooking and as a medicinal tea for treating colds for centuries.
