Rare and endangered! One of Japan’s most elusive heirloom peppers, a true mountain treasure from the cool, volcanic foothills of Mount Madarao in Shinshu. Named for its rounded, floral cross section (botan means peony) peppers start with a burst of sweet, juicy flavor before unfolding into a gentle, lingering heat and a lovely, tender, balanced flavor. Sweeter in cool climates, spicier when ripened to deep red. Perfect for grilling, pickling in miso paste, or simmering into regional dishes like yatara, a fresh summer dish of chopped vegetables and pickles, and yuzu kosho paste, a fermented condiment made from citrus peel, peppers, and salt.
