Saffron, the most expensive spice in the world, is pollen harvested from the 3 stamens of this pretty purple crocus. Depicted in Cretian and Santorini frescoes as long as 3600 years ago! Known as "red gold" for its vibrant color and high value, can thrive in Central Texas with proper care. The region’s hot summers and mild winters mimic the Mediterranean climate saffron prefers. The plant needs a dry summer for dormancy and a cool, moist winter for growth. Saffron can be planted in the fall and harvested in spring. The soil should be well-drained and slightly alkaline, which can be achieved by amending clay soil or using raised beds. While drought-tolerant, saffron requires regular watering during its growing season, but over-watering can cause bulb rot. After blooming in the cooler months, watering can be reduced (or bulbs can be removed and stored until Autumn).
